Raita is one of the dish prepared using Spring onion, you can also try making pachadi (Hashi or Bajji we call it in our language) . Which is more famous in my hometown, we prepare pachadi from almost all vegetables. Like Brinjal, cucumber, tomato, onion, garlic, beetroot, potato and many more. Roasted vegetables along with the spices is mixed with coconut milk and curd. usually only one type of vegetable is used, for example if brinjal is used then it is brinjal pachadi.
Spring onions are chopped and roasted then mixed with curd. You can use curd or the buttermilk because some people doesn’t like the taste of curd. Whisked curd would be the good option for this. otherwise you can also use coconut milk along with whisked curd. You can also serve this along with vegetable pulao or parathas.
