Mangalore Buns | Banana Poori | Banana Buns recipe – with step by step photos, description and video of the recipe is here. It is a popular breakfast or tea time snacks in the Udupi – Mangalore region of Karnataka, India.
The buns are mild sweet, soft fluffy Poori’s prepared using all purpose flour, banana, cumin seeds, sugar, salt, curd and little ghee. These buns are also called as banana buns or banana poori’s.
Typically served with a spicy coconut chutney and sambar, but they also taste great without any accompaniment. You can also serve them with veg kurma. This delicious poori recipe is popular across karavali and malnad region of karnataka.
Firstly, these are best made with overripe bananas, so you can adjust the sugar based the sweetness of the bananas. You can have it for breakfast along with coconut chutney or for evening tea. So it’s a Breakfast as well as snacks recipe.

Moreover, Banana Poori can also be prepared using whole wheat flour instead of all purpose flour or you can use half – half of both the flours. The dough has to be kept at the room temperature for 6 to 8 hours. So you need to plan and prepare this poori’s. It cannot be prepared instantly as it requires fermentation. The time may vary based on how hot the weather is.
Furthermore, these banana poori’s prepared using whole wheat flour texture similar to normal poori. But the one made from maida are soft and fluffy.
Usually I avoid using all purpose flour, instead I use whole wheat flour. But this is the first had bought all purpose flour from the shop, just to prepare this Mangalore buns.

Mangalore Buns | Banana Poori | Banana Buns recipe
Ingredients
- 3 Banana medium sized
- 2.5 cup All purpose flour (Maida)
- 2 tbsp Sugar
- 1/4 tsp Salt
- 1/2 tsp Cumin
- 1/4 cup Curd
- 1/2 tsp Ghee
- 1/2 cup All purpose flour or Wheat flour for dusting
- Oil to deep fry
Instructions
- Remove the peels of Banana and mash them to make a puree. Or else you can make banana puree using mixi jar.
- Add 2 TBSP sugar to mashed Banana. You can adjust the sugar based on the sweetness of the Banana.
- Then add 1/4 tsp Salt.
- Add 1/2 tsp Cumin or Jeera to it.
- Also add 1/4 cup of curd.
- Mix everything well.
- Add 2.5 cups of all purpose flour or maida to the banana mixture.
- Knead them wel, add little water if required.
- Prepare a soft dough.
- Grease the dough with 1/2 tsp of Ghee.
- Cover and rest the dough for 8 hours for fermentation.
- After 8 hours, sprinkle some dry flour (maida or wheat flour).
- Knead the dough well again for 2 minutes.
- Take ball sized dough.
- Dust with maida or wheat flour and roll it into slighlty thick than poori.
- Deep fry in a Hot oil. Gently press it on the edges to get the puffed buns.
- Flip it over and fry until buns get dark golden brown colour on both sides.
- Serve it hot with veg kurma or chutney.

HOW TO MAKE MANGALORE BUNS | BANANA POORI WITH STEP BY STEP PHOTOS :

TIPS & VARIATION:
- You can adjust the sugar based on the sweetness of the Banana. You can add more sugar if you want more sweet.
- Use more ripened banana for the delicious flavour.
- You can use whole wheat flour instead of all purpose flour.
- Finally, 8 hours of resting time is very important to get puffed soft buns.
