What is Cauliflower Rice?
Have you heard of Cauliflower Rice? It is basically Cauliflower florets are grated to small pieces that resembles rice grains. It is a low carb alternative to rice. The cauliflower grains are sautéed to remove the moisture. After that it is mixed with sautéed veggies and some spices.
Furthermore, you can customise this recipe by adding your choice of vegetables. I have added carrot, fresh green peas, bell peppers. You can also consider adding some beans or jalapeño/paprika if you want it to be spicy. I have not included corn, onion etc just to cut down the carb amount.
Cauliflower rice is low carb, keto-friendly, vegan, paleo, customisable and grain free. You can either use store bought cauliflower rice or grate cauliflower freshly at home. If you have food processor then it’s easy to chop the cauliflower into small pieces.

Keto Friendly Cauliflower Rice
Ingredients
- 1 1/2 cup Grated Cauliflower
- 3 tsp Butter
- 5-6 minced Garlic
- 1/2 cup Red & Green Capsicum
- 1/4 cup Fresh Green Peas
- 2 TBSP Grated Carrot
- 1 TBSP Tomato Puree
- 1/2 tsp Cumin
- 1/2 tsp Chilli Flakes
- Salt to taste
- 1 tsp Lemon Juice
- 1 TBSP Coriander leaves
- Some Cheese *Optional
Instructions
- Separate the cauliflower florets and clean them.
- After cleaning grate it or you can use food processor for this.
- In a pan, add 1 tsp of butter.
- Once the butter is heated, add grated cauliflower.
- Roast for 2 minutes, or until the moisture disappears.
- Transfer to a plate and keep it aside.
- Again in a pan add 2 tsp of butter.
- Once it is heated, add 5-6 minced garlic.
- Add 1/2 cup of red & green capsicum.
- Add 1/4 cup fresh green peas.
- Next add 2 TBSP grated carrot.
- Then add 1 TBSP Tomato puree.
- Add 1/2 tsp Cumin and 1/2 tsp chilli flakes. Sauté them.
- Add the roasted cauliflower.
- Then add Salt to taste.
- Also add 1 tsp of Lemon juice.
- Garnish with 1 TBSP chopped Coriander leaves.
- Mix everything well.
- Ready to serve.

TIPS & VARIATION:
