- 3 medium sized Potato Peeled and chopped
- 1 Carrot Peeled and chopped
- 1 Green chilli slit
- 7-8 Curry leaves
- 1 tbsp Coriander leaves chopped
- 2 tbsp Oil
- 1/4 tsp Jeera
- 1/4 tsp Mustard seeds
- Asafoetida generous pinch
- 1/2 tsp Turmeric powder
- 2 tbsp Coconut Grated
- 1/4 tsp Kasuri methi dry optional
- Water as required
- Wash all the veggies and peel. Then chop it into smaller dices or lengthwise. grate the coconut and keep all the ingredients ready.

- Heat 2 tbsp of oil on a pan. Add mustard seeds, jeera, green chilli, curry leaves, turmeric powder.
- Then add chopped potato and carrot. let it get well coated in oil. they fry for a minute.
- Add salt and mix well.
- After that add half glass water and cover it with a lid. let it cook for 5 minutes. Then check if it is not soft, you can add some more water and cook.
- Once the potato and carrots are soft, add grated coconut and copped coriander leaves. Also add little of dry kauri methi and mix well.
- Potato Carrot fry is ready to serve.
