Quick Cucumber Raita Recipe | Kheera Raita – This raita is made by finely chopped onion, tomato, grated cucumber and obviously yogurt/curd. Coriander leaves is optional. Fresh vegetables used in this raita make this delicious and also Cucumber acts as a coolant to our body.
I haven’t used much of green chilli in the raita because this raita would accompany something which is spicy like vegetable pulao or the biryani. So the raita is served to neutralise the spice. If you like you can add finely chopped green chilli too.
Finally, coming to serving part – this raita can accompany anything spicy rice pulao, biryani’s, paratha’s. Or you can have it with steamed rice.
