Healthy and tasty chutney powder or idli podi is prepared from Flaxseed. Typical North Karnataka meal is incomplete without chutney powder as a condiment to the roti’s. Also chutney powder is a great accompaniment to idli or dosa along with oil / ghee.

Firstly, there are many varieties of chutney powder either based on the ingredients used; like Peanut chutney powder, Coconut chutney powder, Curry Leaves Chutney Powder, etc. Here is another variety of chutney powder prepared from Flaxseed.
Furthermore, being a south Indian I’m personally a big fan of chutney powder as an accompaniment to idli and dosa. You can slightly adjust the taste of Chutney powder by increasing or decreasing the amount of ingredients.
Moreover, in this recipe roasting the flaxseeds is very important, roast until the flaxseeds starts popping. Also don’t make this chutney powder in big batches, after somedays it will start smelling little oily.
What is Chutney Powder?
Chutney powder also known as Chutney pudi or Milagai podi or Gun powder. Each region has its own way of preparing chutney powder. Chutney powder is served as an accompaniment to idli, dosa, roti, or as a side dish to rice along with ghee.

Flaxseed Chutney Powder
Ingredients
- 1 cup Flaxseed
- 1/4 cup Chana Dal
- 1/2 cup Roasted Gram
- 1/4 cup Urad dal
- 2 tsp Fenugreek seeds
- 1 tsp Dry Mango Powder
- 3-4 Cloves
- 7-8 Black Pepper
- 1 tsp Oil
- 8-10 Dry Red Chillies
- Salt to taste
Instructions
- In a pan, take 1 cup of Flaxseeds.
- Roast them on low flame.
- When it starts popping, Switch off the flame.
- Transfer to a plate and allow it to cool.
- In the same pan, add 1/4 cup Chana dal.
- Also add 1/4 cup Urad dal. And roast it for a minute on a low flame.
- Next add 2 tsp of Fenugreek seeds. This is optional. Fenugreek seeds actually gives a little bitter taste. You can skip it if you want.
- Add 1/2 cup Roasted gram.
- Roast until it turns aromatic.
- Then add 3-4 Cloves.
- and also 7-8 black pepper.
- After roasting well on a low flame, transfer to a plate and allow it to cool completely.
- In the same pan, add 1 tsp of oil.
- Once the oil is heated, add 8-10 dry red chillies. Roast them.
- Keep in the same pan, so that it will get crisp.
- Once it is cooled, transfer everything to Mixi jar.
- Add 1 tsp of Dry mango powder.
- Also add Salt to taste.
- Add the roasted red chillies.
- Blend it into a Coarse powder.
- Allow it to cool and store in an airtight container.

HOW TO MAKE FLAXSEED CHUTNEY POWDER WITH STEP BY STEP PHOTOS:
- In a pan, take 1 cup of Flaxseeds.

- You can also add roasted curry leaves to this while preparing.
- Make sure you roast the ingredients on low flame, without burning.
- Adding garlic will give it a different flavour.
- Finally, you can skip adding the fenugreek seeds as it gives a little bitter taste.
