Bilimbi Juice

Firstly, Bilimbi is scientifically known by the name Averrhoa bilimbi, and commonly known by the names like Irumban Puli, Pulinchikka, Vilumpi, Bimblikayi, Gommareku in various languages. Bilimbi is a popular fruit/ vegetable in South Asian countries, mostly very common in tropical regions. It is thought to have originated in Indonesia or Malaysia. 

Bilimbi is used to prepare pickles, juices, chutney’s, and most of the time used as a souring agent wherever required; instead of tamarind. When we were kids we loved eating it along with rock salt and chilli powder, just like we eat raw mangoes.

Moreover Bilimbi’s are not a popular commercial crop, as the shelf life is less and difficult to transport long distances. Besides its refreshing and zesty taste, it has umpteen benefits for human health such as managing diabetes, treating hypertension, remedying haemorrhoids, strengthening bones and soothing cough and cold.

Furthermore, these are used as a cleaner because of the acidic nature, and I have heard this fruit juice also works wonder on cloth stains. 

Talking about the recipe, I have tried this recipe with little twist. I have added Vitamin leaves (also known as star gooseberry leaves or Chakramuni leaves) as a natural food colour. This leaves doesn’t have any strong smell. If you don’t get these leaves you can skip them or you can add green food colour. As the name refers ‘Vitamin Leaves’, it is a powerhouse of vitamins like Vitamin E, K, B and Vitamin C. The leaves are low in calories and fat. They are rich in protein and dietary fiber.

Uses & Benifits of Bilimbi Juice

Bilimbi juice is a treat for the taste buds. Its flavor is a delightful combination of tartness and sourness, similar to that of green apples or unripe mangoes. This tangy taste makes it an ideal ingredient for a refreshing and thirst-quenching drink, especially in hot and humid climates.

Ingredients
  

  • 6 Bilimbi / Pulinchikka
  • 1 tsp Ginger Chopped
  • 1/2 tsp Rock Salt
  • 1/4 cup Sugar or any sweetener
  • 2 strings Vitamin Leaves as a natural colouring agent
  • 3 cup Water

Instructions
 

  • Take 5-6 Bilimbi fruit.
  • Wash the Bilimbi Fruit and chops off both the ends. 
  • Then cut into round slices. 
  • Transfer it into the mixi jar. 
  • Add 1 tsp chopped ginger.
  • And add 1/2 tsp rock salt to taste.
  • Then add 1/4 cup sugar. You can use any sweetener of your choice. 
  • Next I have added 1/4 cup of vitamin leaves (these are healthy too) as a natural colouring agent. You can either add mint leaves or green food colour. 
  • Blend it into a smooth paste. 
  • Once blended, filter it through the strainer. 
  • Add the water to the mixi jar and wash out the residue and strain it. 
  • Then add 2 cups of water to adjust the consistency. 
  • Mix well and transfer to the serving glass.
  • You can have it as it is or have it chilled.

TIPS & VARIATION: 

  1. Firstly, I have used Vitamin leaves/ Chakramuni leaves as a natural colouring agent. Also it is a powerhouse of vitamins as name indicates. If you don’t get these leaves, you can skip it.
  2. Secondly, I have used sugar as a sweetener, you can use any sweetener of your choice.
  3. You can also use green chilli or some pepper powder, if you want it to be spicy.
  4. Instead of Vitamin leaves you can also use mint leaves, but there will be a difference in the taste.

HEALTH BENEFITS : 

Bilimbi has umpteen benefits for human health such as managing diabetes, treating hypertension, remedying haemorrhoids, strengthening bones and soothing cough and cold. 

Side effects: Please Note, the Bilimbi fruit contains high levels of oxalate. Acute kidney failure due to tubular necrosis caused by oxalate has been recorded in several people who drank the concentrated juice on continuous days as treatment for high cholesterol.
