How to make Vegetable Cutlet

Vegetable cutlet is one of my favorite from my childhood days. I’m sure this is the best way to make kids eat veggies. This simple snacks can be prepared very easily. It is prepared using combination of vegetables (of your choice). Vegetable cutlet

Vegetable cutlet is a snack item made with mixed vegetables. It’s great to make simple, easy and delicious vegetable cutlet for evening snack or during rains, serve them hot with tomato ketchup and coriander chutney.

I make these vegetable cutlets very often, most of the times I have carrots, potatoes, peas and French beans in the fridge. so it’s easy for me to make these cutlets. And also you can alter the vegetables based your taste.

You can also sandwich them in a burger or bread slices, top with sauce and veggies of your choice and serve.

These cutlets can be baked, deep fried or shallow fried to suit one’s diet and taste. These are made using a combination of veggies with potato as the base for binding.

How to make Vegetable Cutlet

Ingredients
  

  • 2 Potato boiled and mashed
  • 1 Carrot grated
  • 1 Onion chopped
  • 1/2 inch Ginger grated
  • 2 Green chillies chopped
  • 6-7 Curry leaves
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Jeera powder
  • 1 teaspoon Turmeric powder
  • 5 tablespoon Besan / gram flour
  • 2 Bread crumbs
  • Salt as required
  • Water
  • Oil for frying

Notes

Boil potato till it becomes smooth, remove the water and keep it aside.
Chop the onion, carrot (you can also grate it), green chillies, ginger. You can alter the vegetables based on your taste. Beans, Peas, paneer, cabbage can also be used.Vegetable cutlet
Put the bread crumbs, gram flour, red chilli powder, turmeric powder, jeera, salt and add all the above vegetables.
Mix it well by putting little of water to make a non-sticky dough. You can add more bread crumbs to make it non-stick. Taste the mixture, add the seasonings as per your taste.Vegetable cutlet
Make the round patties as shown in the picture. In the mean-time heat the oil pan for deep frying.
Gently drop each cutlet into the oil and fry until it becomes golden brown. You can also pan fry cutlets on a tawa.
You can serve the cutlets as a snack with ketchup or coriander chutney. Make the bigger cutlet and place it in between bun along with chopped tomato, lettuce and seasoning sauces to make vegetable burger.
