Turmeric Root Curry

Firstly, Turmeric is a medicinal herb with anti-inflammatory potential in fighting the diseases. Turmeric is more mild when it is fresh form. When it is dried and powdered it will give a strong flavour to the dishes. Usually turmeric powder is used in our day to day cooking. However, In India we get fresh turmeric during winter. 

Turmeric is a penecea. It is widely used because of its vast health benefits. Anti-inflammatory, anti-aging, natural pain reliever, good detoxifier, fat burner, helps in prevention of diabetes and heart problems…what not? It has a long list of benefits. 

Earthy flavoured,  turmeric has been used in Asia for thousands of years and is a major part of Ayurveda. It is a key ingredient used in many Indian dishes such as curry, stir fry, pickles, immunity boosting drinks like golden milk, and many other dishes.

Back to the memories – during my childhood, grandma use to prepare this turmeric root curry. Those days all the vegetables were grown in the backyard that was sufficient to the family for cooking. Lots and lots of fresh vegetables and leafy vegetables were grown. I still remember grandma would water them by pulling water from the well. There were days she use to water the plants in fading twilight. 

Most of the time we don’t get the fresh turmeric roots in the markets. I had prepared this recipe when I had visited mom’s place. She has many turmeric plants in the backyard. Here is a recipe of Turmeric root curry I have learnt from my mom. I just loved this curry, it can be eaten everyday moderately or prepare this curry at least three four times. You will stay away from common sickness during winter and also has long term health benefits. 

Moreover, turmeric leaves are also used for preparing kadubu or patoli.

Turmeric Root Curry

Fresh Turmeric Root Curry | Kacchi Haldi ki Sabzi | Raw Turmeric Gojju

Ingredients
  

  • 1/2 cup Chopped Turmeric Roots
  • 1/2 tsp Oil
  • 1 cup Grated Coconut
  • 3/4 cup Water to blend
  • Salt to taste
  • 2 TBSP Jaggery
  • 15-20 Curry Leaves
  • 1 tsp Dry mango powder (or Tamarind)

For Preparing Masala

  • 1 tsp Oil
  • 1/2 tsp Fenugreek seeds
  • 7-8 Red chillies (adjust the spice)
  • 1.5 tsp Coriander Seeds
  • 3/4 tsp Mustard seeds
  • 1/4 tsp Cumin
  • 4 No.s Cloves

Instructions
 

  • Wash the turmeric roots well, as it contains mud particles. Pat them dry with the kitchen towel. 
  • Chop them into slices.
  • In a pan, add 1 tsp of oil. 
  • Once the oil is hot, add 1/2 tsp of Fenugreek seeds. 
  • Add 7-8 red chillies and roast it.
  • Then add 1.5 tsp Coriander seeds, 3/4 tsp mustard seeds.
  • Add 1/4 tsp Cumin, and 4 No’s cloves. Roast it well. It turns aromatic. 
  • Keep aside, allow it to cool. 
  • In a pan, add 1/2 tsp oil. 
  • Add 1/2 cup chopped turmeric roots.
  • Roast it for 3-4 minutes or until the raw aroma is gone. 
  • In a mixi jar, Add 1 cup of grated coconut.
  • Add the roasted spices. 
  • Also add the roasted turmeric roots. 
  • Add 3/4 cup water. 
  • Blend it to a smooth paste. 
  • Take blended masala paste in a pan. 
  • Add Salt to taste.
  • Then add 2 TBSP jaggery and dissolve it. 
  • Add 15-20 Curry leaves and allow it to boil. 
  • Once it starts to boil, simmer it for 5 more minutes.

TIPS & VARIATION: 

  1. Firstly, wash the turmeric root well for impurities and mud particles. 
  2. You can also boil the chopped turmeric root in water instead of roasting. 
  3. Adding a teaspoon of dry mango powder or tamarind to this curry will enrich the taste. 

HEALTH BENEFITS OF TURMERIC: 

Curcumin, the therapeutic component of turmeric is packed with anti-inflammatory, anti-bacterial and anti-viral properties which boosts healing. 

Have it with warm milk, it is an excellent pain remover. Also a very good for digestion. 

Natural detoxifier, raw turmeric can help in eliminating toxins from blood. 

Turmeric is used in many beauty products as it reduces the impurities from the skin. Traditionally, it is used in treating skin ailments.

Turmeric powder we use in our coking is prepared from the Turmeric roots. Most of the time we don’t get the fresh turmeric roots. Anti inflammatory root has the component called ‘Curcumin’.

Use it in smoothies, herbal drink, soups, curries, pickles etc.

3. Is Fresh Turmeric better than powdered Turmeric?

Anything that is processed can’t be as pure as the fresh ones. So in my opinion fresh turmeric has more benefits than the powdered Turmeric. Certain amount of compounds and the natural oils that are lost during the processing. Moreover Turmeric widely used spice in cooking, it is also one of the most adulterated spices.

4. What happens if you eat Raw Turmeric?

Turmeric is anti-inflammatory, anti-bacterial and anti-viral properties which boosts healing. It is an excellent pain remover. Also a very good for digestion. Turmeric acts as a natural detoxifier.

5. How you can enhance the Turmeric absorption?

Unfortunately, the ‘Curcumin’ in turmeric is poorly absorbed into the bloodstream. Coupling turmeric with black pepper(which contains the compound ‘Piperine’) may enhance its effects. Many research shows that combining pepper along with turmeric enhances the Curcumin absorption by upto 2000%.
