Remove the outer layer of the banana stem / plantain stem until you can remove it from hands. Then cut it into rounds removing the thread like fiber with your index finger. Then chop into small pieces.
Soak in a diluted curd or buttermilk until use as soon as you finish chopping. otherwise it starts becoming dark colour.
Once the chopping of other vegetables are also ready then drain the water.
In a mixing bowl take 3/4 cup of chopped banana stem.
Add 1/2 cup of chopped cucumber.
Also add 1/2 cup of grated carrot.
Then add 1/4 cup of chopped onion.
Next add 1/4 cup of pomegranate kernels.
Add 1/4 cup of moong dal (soaked in water for 30 minutes).
Then add 1/2 tsp of grated ginger.
And squeeze some lemon juice.
Add salt to taste.
Mix well & garnish with chopped coriander leaves.
Banana stem Salad is ready to serve.
