Rava Kesari/ Kesaribath from Rava/ Sweets recipe

Rava kesari or Rava kesaribath is a very well known dessert from South Indian Cuisine. And its easy and very tasty too.

Ingredients
  

  • 1/2 cup Fine Rava /Sooji
  • 1/2 tablespoon Ghee
  • 10 Cashews nuts
  • 7-8 Raisins
  • 1 cup Sugar
  • 1/4 teaspoon Cardamom powder
  • 2 tablespoon Ghee
  • 7-8 strands Saffron
  • 1/8 teaspoon Salt Very little amount of salt
  • 1.5 cups Water

Notes

  1. Take a pan and heat it, put ghee and roast the cashew nuts.
  2. Keep on stirring until they become golden color. Then take out the cashew nuts and keep aside.
  3. In the same pan left over ghee will be there after roasting the cashew nuts. Add Rava/ Sooji to that and keep on stirring till they look little crispy. On a medium flame it takes about 3-4 minutes. Meanwhile boil the water.
  4. Once the rava is rosted well then add the water slowly, and same time you have to keep on stirring. Otherwise it will form lumps.
  5. Keep on stirring, it will start getting semi solid form.
  6. Once all the water absorbed by the rava, rava will get bigger than the earlier size.
  7. Then add sugar and mix properly by stirring. Sugar will be converting into liquid form. Again the rava will absorb some amount and some gets vaporised. Then add saffron, cardamom powder, raisins and roasted cashews.
  8. Mix well such that everything is mixed properly.
  9. So the rava kesari is ready, serve hot.
